Katie Mae's Southern Style Skillet Cornbread, Gluten-Free

Katie Mae's authentic southern style cornbread, converted to gluten-free.
  • 1 Cup Gluten-Free All Purpose Flour
  • 1 Cup Gluten-Free Cornmeal
  • ¼ Cup Sugar
  • 4 tsp Baking Powder
  • ¾ tsp Salt
  • 2 Eggs
  • 1 Cup Milk
  • 2 T Butter
  • 2 T Lard (or another 2 T butter)
  1. Add butter and lard (or 4 T butter) to a 10" cast iron skillet, place skillet in oven.
  2. Preheat to 425.
  3. Mix eggs and milk.
  4. Mix flour, cornmeal, sugar, baking powder, and salt in another bowl.
  5. Add dry ingredients to wet ingredients and combine until it just comes together.
  6. When oven is preheated, pull out skillet and pour in batter. It should sizzle.
  7. Bake for 20 minutes with the oven door cracked open with a wooden spoon.
