- 1 Cup Gluten-Free All Purpose Flour
- 1 Cup Gluten-Free Cornmeal
- ¼ Cup Sugar
- 4 tsp Baking Powder
- ¾ tsp Salt
- 2 Eggs
- 1 Cup Milk
- 2 T Butter
- 2 T Lard (or another 2 T butter)
- Add butter and lard (or 4 T butter) to a 10" cast iron skillet, place skillet in oven.
- Preheat to 425.
- Mix eggs and milk.
- Mix flour, cornmeal, sugar, baking powder, and salt in another bowl.
- Add dry ingredients to wet ingredients and combine until it just comes together.
- When oven is preheated, pull out skillet and pour in batter. It should sizzle.
- Bake for 20 minutes with the oven door cracked open with a wooden spoon.
